Vineyard position: Castagnito, Piedmont, Italy.

In the Castagnito country is situated a particular hill named Costa, mentioned in the history for the variety of vine Nebbiolo; it’s particularly indicated for the production of a fine and elegant wine.

Field: argillaceous- calcareous

Date of harvesting: the end of September, beginning of October

Yield per hectare: 50 hl

Wine making

In this grapery we check the yield that mustn’t beat up 2,5 kilos, so we make two different thin (the first one on the beginning of august and the second one on the end of august) with the choice of grapes and we eliminate the ending part of the grape.

During the harvest we do the grapes screening with two transitions for the picking, 6- 10 days apart.

La fermentazione avviene in maceratori di acciaio che garantiscono il giusto contatto buccia-mosto ed un’adeguata estrazione del colore.
Successivamente, il vino viene messo in tonneaux di 600 litri e botti di rovere da 2000 litri e in carati già utilizzati con almeno due passaggi, dove avviene la fermentazione malolattica e nei quali sosta per 12-15 mesi prima di essere nuovamente assemblato in vasche d’acciaio.

It is bottled in august and it is sold in October, after two years before the harvest.
