Vineyards position: Castellinaldo, Piedmont, Italy
It’s a vocated area for barbera growing: the vineyard lies on clayey soils that give big and round wines with intense colours and distinct fruity aromas.
Soil: clayey-limestoned
Date of harvesting: end of September – beginning of October
Yield per hectare: 40 hl
Wine-making
Since we are convicted that a good wine born in the vineyards, we devote a long time to them during the year, in fact we practise a double clearing.
The period of the harvesting in chosen taking in consideration the rapport sugar/acidity and the phenolic maturity. The harvesting in done in two times.
The crushing takes place slowly just to eliminate the totality of steems and mannas.
The fermentation has a process of one week with controlled temperatures, during this period, we find to take out much colour possible parting the grape seeds by the heap. After, the wine stays in French barriques for one year so that in them is developed the malo-lactic processing. In July the wine is bottled and it’s ready for the market in October, two years after the harvesting.
Tasting notes
Profumo ricco, sontuoso e avvolgente con una nota accentuata di frutta rossa e, in sottofondo, di vaniglia e di liquirizia. Sapore pieno, potente di grande struttura. Sorprendente è la sua eleganza che accarezza lungamente la bocca ricordando la confettura di prugna e l’uva appassita.
It’s indicated with red meat and birds, with cheeses of medium or long maturing.
