Wine-making
Also if it is a young, fresh and fruity wine, in these vineyards is done a double clearing.
The fermentation is done in stainless steel casks with temperatures of 25-26° C; this allows to have good colour, fragrance and aroma. At the end of the above-mentioned operation, the wine is transferred in wood casks of 150-200 litres and in French barriques already used for two times. After the malo-lactic, the wine remains in wood just to the summer and in July it is bottled.
The wine is introduced on the market in September, one year after the harvesting.

It’s indicated with dishes rich of taste, like, for example, soups and meats, and with soft or rich cheeses.
